Fabulous Freezer Meals

One thing I don't always look forward to about coming home from work is having to figure out what to do for dinner. On a good day, I have a plan for what I want to make and the ingredients to do so. But usually that isn't the case.

So I decided to try a few freezer meal ideas that I had seen on Pinterest and on the Food Network. If you aren't already familiar with The Pioneer Woman, do yourself a favorite and get one of her cookbooks, check out her website, or catch her show on the Food Network. She has fantastic recipes that are usually pretty simple--including a few trusty freezer meals.

I tried her "Lasagna Rollups" (click here for the recipe) and it made about 4 loaf sized pans. For one person, that's about 2 meals per pan.


 I also put together a pan of "Stuffed Shells". Basically, its large shell shaped pasta stuffed with ricotta cheese and topped with your favorite pasta sauce, parmesan cheese, and basil. This is a simple and cheap recipe that will probably feed me about 4 times. What I love most about pasta is the fact that it can be reheated and have it taste basically the same!
 Finally, I made 7 burritos to individually wrap and freeze. I used a pound of ground beef seasoned with garlic salt, cumin, oregano, and pepper, refried beans, and cheese. I didn't take pictures of the process, so if you don't know what a burrito looks like, please CTG (consult the Google) ;)

Here is the finished product! Two hours of cooking, $40 in ingredients, and 20 meals worth of food! I have to say, everything I've tried so far has been awesome! It's so nice to just quickly microwave a burrito or throw in a pan of lasagna rolls. I have a few more recipes to make so I will share those when they are done.
